Casa Crespo, located in Oaxaca and led by Chef Óscar Carrizosa, offers a traditional 7-mole tasting menu. Each dish is served on a specific heirloom corn tortilla and paired with a selected mezcal to enhance its flavors.
The menu includes the following pairings:
Mole Verde (Green Mole): White corn tortilla pressed with hoja santa + Cuishe Mezcal (herbal and mineral profile).
Mole Amarillo (Yellow Mole): Squash blossom tortilla + Espadín Joven Mezcal (citrus and smoky notes).
Manchamanteles: Seasonal fruit-infused tortilla + Tobalá Mezcal (floral and fruity profile).
Mole Almendrado (Almond Mole): Plantain tortilla + Madrecuishe Mezcal (notes of dried fruits).
Mole Rojo (Red Mole): White corn tortilla + Arroqueño Mezcal (notes of dark chocolate and cinnamon).
Mole Negro (Black Mole): Ceremonial tortilla + Tepeztate Mezcal (complex mineral and herbal profile).
Mole de Chicatanas (Chicatana Ant Mole): Bone marrow tortilla + Mezcal de Pechuga (silky and fruity body that softens the flavor of the chicatana ant).

Discover five sacred drinks that connected our ancestors with the gods, the earth, and the universe. An experience of history, mysticism, and tradition.
Seasonal Fruit Atole: A comforting drink made from nixtamalized heirloom corn and fresh fruit, honoring the warmth of the community hearth.
Bu’pu: A Zapotec treasure from the Isthmus of Tehuantepec. A base of white atole topped with a dense foam of cacao and local flowers (guié chachi and guié shuba).
Tejate: A tradition from the Central Valleys of Oaxaca. Made with corn, cacao, mamey sapote pits, and rosita de cacao, hand-whipped in a clay pot.
Ancestral Hot Chocolate: A ceremonial drink once reserved for warriors and priests. Pure cacao ground on a metate, dissolved in water, and frothed with a molinillo to release its vital force.
Pulque: The gift of the goddess Mayahuel. Naturally fermented maguey sap (aguamiel); a ritual, festive drink with a mystical texture.

At Casa Crespo, cuisine is not just consumed; it is lived, inherited, and respected. We invite you to be part of one of Oaxaca’s most fascinating pre-Hispanic traditions with our Caldo de Piedra Experience, a culinary tribute to the community of San Felipe Usila, Chinantla.
The Caldo de Piedra (Stone Soup) is much more than a dish: it is a ritual of gratitude and community. Every fresh ingredient is placed in a jícara gourd bowl and cooked instantly before your eyes using glowing river rocks heated red-hot. The hiss of the water hitting the stone and the aromas released create a mystical, unforgettable atmosphere.
We have designed a complete menu that balances the intensity of sea and land, closing with the sweet, comforting touch of our Oaxacan soil.

This culinary experience pays homage to the native biodiversity of Mesoamerica, entirely omitting European ingredients to craft a menu sourced exclusively from heirloom corn, insects, wild blossoms, ancestral herbs, game, and pure cacao. A sensory immersion into our roots through the timeless techniques that birthed our culture.
