Tasting Experience: The Soul of Oaxaca in 5 Mezcals

At Casa Crespo, we believe that mezcal is not just drunk: it is breathed, discussed, and lived. We invite you on a sensory journey through five agaves that capture the astonishing diversity of our land—from noble cultivated agaves to the mystical jewels growing on Oaxaca’s most remote cliffs.

Let our experts guide you through a tasting designed for both curious palates and discerning connoisseurs.

The Protagonistas of the Table

Our 5-flight selection takes you on an ascending journey of flavors, textures, and stories:

  • Espadín: The Host of Tradition
  • The Agave: Agave angustifolia. The pillar of the mezcal world, cultivated with patience for 7 to 9 years.
  • In the Glass: The perfect starting point. A gentle, balanced, and crystalline mezcal with subtle smoky notes, herbal flashes, and a citrus finish that readies your palate.
  • Cuixe: Wild Elegance
  • The Agave: Agave karwinskii. A wild agave of striking vertical growth that takes up to 12 years to mature.
  • In the Glass: Stands out for its unmistakably dry and vegetal character. On the palate, it evokes wet earth, green bell pepper, and fine woods. A structured and highly elegant jewel.
  • Arroqueño: The Ancestral Giant
  • The Agave: Agave americana. One of the largest magueyes in the world, whose wild maturation can take between 15 and 20 years.
  • In the Glass: Complex, robust, and majestic. It offers an explosion of flavors ranging from the sweetness of dark chocolate and dried fruits to a subtly smoky and floral finish that lingers on the palate.
  • Tobalá: The Treasure of the Shadows
  • The Agave: Agave potatorum. A small wild maguey that grows under the shade of oak trees in arid, mountainous terrains.
  • In the Glass: Pure delicacy and mysticism. It surprises with its markedly floral and fruity profile, featuring notes of apple, mint, and a subtle sweetness that envelops the mouth from start to finish.
  • Tepeztate: The Spirit of Time
  • The Agave: Agave marmorata. The king of patience—an agave that defies gravity by growing on vertical cliffs for 25 to 35 years.
  • In the Glass: A truly mystical experience. Its flavor is intensely herbal, with notes of jalapeño, minerals, river stones, and a unique spicy touch. Drinking Tepeztate is, literally, drinking time.
