Elixirs of the Earth: A Journey Through Pre-Hispanic Beverages

Welcome to a journey back in time through the palate. For our ancestral cultures, the act of drinking did not just nourish the body; it connected the soul with the gods, the earth, and the cycles of the universe. Today, we invite you to discover five sacred elixirs that have withstood the test of centuries.

The Experience Menu

  1. Seasonal Fruit Atole: The warmth of home and the cornfield. We begin with the comfort of the milpa. Atolli (meaning ‘watered down’) is the foundation of Mesoamerican nutrition. Made with nixtamalized heirloom corn dough and subtly sweetened with fresh seasonal fruit, this creamy drink honors the cycles of the earth.
  2. Bu’pu: The foam of the Zapotec gods. We travel to the Istmo de Tehuantepec with one of Oaxaca’s most jealously guarded treasures. Bu’pu (meaning ‘foam’ in Zapotec) is a liquid work of art. A base of white atole serves as a canvas for a dense, aromatic, and mysterious whipped foam made from cacao, guié chachi blossom, and guié shuba.
  3. Tejate: The drink of gods and kings. Originating from the Central Valleys of Oaxaca, tejate is a marvel of pre-Hispanic culinary engineering. Made with corn, fermented cacao, mamey sapote seeds, and the mystical rosita de cacao, it is whipped by hand in large clay bowls until a heavenly layer of “tejate flower” forms. It is refreshing, complex, and deeply sacred.
  4. Hot Chocolate (Ancestral Style): The currency and fuel of the soul. Before it became a global dessert, xocolātl was a bitter, energizing ceremonial beverage reserved for warriors, priests, and rulers. Our chocolate is prepared respecting its origin: pure cacao ground on a metate, dissolved in water, and frothed with a molinillo to lift the foam which, according to the ancients, contains the vital life force (tonalli).
  5. Pulque: Mayahuel’s gift. We close the experience with octli, the ritual and festive drink par excellence of central Mexico. Pulque is not made; it is raised. It is the living sap of the maguey (aguamiel) naturally fermented. With its mystical texture and sweet-and-sour profile, this white elixir is a direct connection to Mayahuel, the goddess of fertility. A toast to life and the maguey!

A note on the experience: Each of these drinks tells a story of resistance. By tasting them, you are not only enjoying endemic ingredients; you are preserving millenary techniques, supporting Mexican agriculture, and keeping the heartbeat of our ancestors alive.
